Fruity Seafood Salad

1 7-ounce packet salmon or tuna, 2 cups cooked shrimps, or any other cooked seafood of your choice
1 small fresh pineapple cut in bite-size pieces, or 1 can pineapple tidbits, drained
1 small cantaloupe, cut in bite-size pieces
1 cup grapes, halved if large
2 kiwi fruit, peeled and sliced
1 can sliced water chestnuts, drained
1/4 cup rice vinegar or other mild vinegar, to taste
Lettuce leaves (optional)
Chopped nuts (optional)

Combine all ingredients but lettuce and nuts in a serving bowl. Serve on a bed of lettuce leaves and sprinkle with chopped nuts if desired.

4-6 servings

Note:  This recipe can be varied endlessly with any fruits, cooked or canned seafood, greens and nuts you have on hand.
