The Diabetes Epidemic

In the last 10 years, the incidence of diabetes in North America has risen by one third to 6.5 percent of the adult population, with the sharpest rise of 76 percent in 30 to 40 year olds. Diabetes causes nerve damage which leads to blindness, deafness, heart attacks, strokes, burning foot syndrome, amputations and kidney failure.

There are two types of diabetes: Type I, in which you cannot make enough insulin; and Type II, in which you make plenty of insulin but cannot respond to it. Most diabetics are Type II and have too much insulin. We now see an alarming number of children and teens with Type II diabetes, which was formerly known as "adult-onset diabetes." The primary cause of Type II diabetes is eating too much refined carbohydrates in bakery products, pastas and sugar-added foods.

Insulin is supposed to drive sugar into cells, but it can't do that until it first attaches on hooks on each cell called insulin receptors. But many people lose insulin receptors and lose their ability to respond to insulin when they:
1) are overweight
2) eat too much fat
3) eat too much refined carbohydrates in bakery products, sugar-added products, pastas and fruit juices.

If you don't want to become diabetic,
1) exercise
2) restrict refined carbohydrates
3) avoid overweight
4) avoid eating too much fat
