Wild Rice with Dried Cherries
Here’s a simple, festive side dish that’s a favorite in our house. 4 cups cooked wild rice 1/2 cup dried cherries
Mix the cherries into the wild rice while it’s still hot, or heat them
together in the microwave.

Microwave Chutney
2 cups chopped fruit (your choice — tart apples, mangoes, peaches,
pineapple, etc., or a combination)
1 onion, chopped 1 cup raisins, currants or chopped dates, or a combination 1/2 cup cider vinegar 1 tablespoon minced fresh ginger 1/2 teaspoon dessert spice blend or cinnamon 1 teaspoon mustard seeds 1 teaspoon fennel seeds pinch cayenne, to taste
Combine all ingredients in a large microwaveable bowl. Microwave
on high for 15 minutes, stirring every 3-5 minutes.
Yield: About 3 cups
